MY BRITISH WIFE MAKES GULAB JAMUN | Indian Dessert Recipe With Milk Powder

It has been so long since we have made any indian desserts that we figured what better time than now to make another one! Gulab jamun is Abbey's absolutely favourite dessert - it really is so yummy! 2 cups of sugar
2 cups of water
3 cardamom pods (smashed)
1 teaspoon of cardamom powder
2 tablespoons of lemon juice (or one large squeeze)
A few strands of saffron

18 tablespoons of milk powder
7 tablespoons of white flour
2 tablespoons of semolina
2 tablespoons of ghee
large pinch of baking soda (around 1 teaspoon)
2 tablespoons of lemon juice (or one large squeeze)
10 tablespoons of milk (warm this)
Oil/ghee for frying (any of your choosing - we chose olive oil)

Firstly, to make the syrup combine the water and sugar in a large pot until this completely dissolves together and boils, creating a sticky texture. Once this has been done, add in the cardamom, lemon juice, and saffron, and stir well, and remove from heat and set aside for later.

Next, add in milk powder, flour, semolina, baking soda, and mix together well. Next add in ghee and lemon juice, and mix well with hands to create a crumble consistency with the mixture. Next, warm milk, and add into mixture in small amounts at a time, kneading mixture with your hands very well until there are no lumps and mixture is smooth. Next, grease hands with ghee, and roll small balls out of the mixture for frying (be sure to make sure that balls have no cracks at all and are smooth). Then, drop balls into hot oil to fry (make sure you reheat the syrup also during this time), and remove from oil when they are a golden-dark brown colour, and drop straight into hot sugar syrup. Once all in the syrup, make sure they are fully coated, remove sugar syrup from heat, cover this with a lid and leave to the side for as long as you'd like for the cakes to soak in the syrup (the longer the better on this - we would recommend at least 2 hours to soak). Once this is done - heat the cakes and enjoy!
